Individual Apple and Blueberry Crumbles

Individual Apple and Blueberry Crumbles
Makes 4 servings 

Ingredients:
  • 2 granny smith apples
  • a handful of blueberries
  • 1 tbsp flax meal
  • 1 tbsp sunflower seeds
  • 1 tbsp oats (not quick oats)
  • 1/2 tsp cold butter or coconut oil
  • cinnamon
  • (optional: greek yoghurt or vegan cream to serve

Directions:
  • Preheat oven to 180C and line a baking tray with baking paper. 
  • Cut the apples in half and scoop out the cores. I also found it helpful to slice a little bit off the back so they stand properly.
  • Fill the centres with blueberries and place on the baking tray.
  • In a food processor or small bullet blender pulse the flax meal, sunflower seeds and oats until  it a crumbly mix is formed. 
  • Place crumble mix in a small bowl and add butter or coconut oil. Rub it in until it is combined throughout.
  • Cover the tops of the apples with the crumble mix and sprinkle cinnamon over the top.
  • Bake in the oven for 30 minutes.  
  • Serve hot with greek yoghurt or vegan cream
  • Enjoy!
