Olive Flatbread

Yum! You've got to try this. Soo satisfying and soo good for you. Made with chickpea flour  - a.k.a gram flour or garbanzo flour. Did you see my post about red lentil bread? Well I now present to you Olive Flatbread!

Olive Flatbread


  • 1/2 cup and a tbsp of chickpea flour
  • 1/2 cup water
  • 10 olives
  • 1/2 tbsp olive oil
  • 1 tsp mixed herbs (I used a combo of basil, thyme and oregano)


  • Preheat oven to 180C
  • Blend chickpea flour, water and mixed herbs, then stir in sliced olives.
  • Add olive oil into a 8 inch pan and place in the oven for 2 minutes.
  • Bring the tray out of the oven and carefully pour the mixture into the pan. 
  • Bake for 15-17 minutes. 
  • Allow to cool slightly, slice up and serve!
