A Ginger Kiss for Bronwyn Jean

Source

It is now officially my sister's birthday in Australia - Happy Birthday Bron! Welcome to the 20's, this post is dedicated to you!

My sister has had a long time love affair with a popular cake bar in Australia called ginger kisses. She LOVES these, so I thought as a birthday present I would come up with a healthier, guilt-free recipe.

Ginger Kiss Slice
A sugar-free, gluten-free, dairy-free ginger cake with coconut cream.

Ingredients:

For the cake
  • 1 cup buckwheat flour (this is a gluten free flour with no relation to regular wheat)
  • 1 tsp gluten-free baking powder
  • 1 1/2 tbsp ginger powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp salt
  • 150ml non-dairy milk of choice (I used soy)
  • 1/2 cup oil (I used olive)
  • 1 egg
  • 1/4 tsp liquid stevia
For the cream
  • 1 can of coconut milk
  • A few drops of stevia to taste

Directions:

For the cake
  • Preheat the oven to 180C
  • Mix the buckwheat flour, baking powder, ginger, cinnamon, nutmeg and salt in a bowl.
  • In a separate bowl whisk together the milk, oil, egg and stevia.
  • Add the wet mixture into the dry and combine thoroughly.
  • Pour the mixture into a greased 9" x 9" square baking tin.
  • Bake in the oven for 15-17 minutes.
  • Let the cake cool.

See here for how to make coconut cream.

Once the cake has completely cooled top with coconut cream and cut into squares. You can also garnish with a little ginger powder dusted over. Makes 9 servings.

And that's it! Happy Birthday Bron :-) go and wish her Happy Birthday at www.bronwynjean.blogspot.com
