It is now officially my sister's birthday in Australia - Happy Birthday Bron! Welcome to the 20's, this post is dedicated to you!
My sister has had a long time love affair with a popular cake bar in Australia called ginger kisses. She LOVES these, so I thought as a birthday present I would come up with a healthier, guilt-free recipe.
Ginger Kiss Slice
A sugar-free, gluten-free, dairy-free ginger cake with coconut cream.
Ingredients:
For the cake
- 1 cup buckwheat flour (this is a gluten free flour with no relation to regular wheat)
 - 1 tsp gluten-free baking powder
 - 1 1/2 tbsp ginger powder
 - 1 tsp cinnamon
 - 1/4 tsp nutmeg
 - 1/8 tsp salt
 - 150ml non-dairy milk of choice (I used soy)
 - 1/2 cup oil (I used olive)
 - 1 egg
 - 1/4 tsp liquid stevia
 
For the cream
- 1 can of coconut milk
 - A few drops of stevia to taste
 
Directions:
For the cake
- Preheat the oven to 180C
 - Mix the buckwheat flour, baking powder, ginger, cinnamon, nutmeg and salt in a bowl.
 - In a separate bowl whisk together the milk, oil, egg and stevia.
 - Add the wet mixture into the dry and combine thoroughly.
 - Pour the mixture into a greased 9" x 9" square baking tin.
 - Bake in the oven for 15-17 minutes.
 - Let the cake cool.

For the cream

Once the cake has completely cooled top with coconut cream and cut into squares. You can also garnish with a little ginger powder dusted over. Makes 9 servings.
