Easy Beetroot Soup

I love soup! And while it's not exactly a soup time of the year, the weather has been cosier then it should. This is my easy peasy soup you can whip up in a couple of minutes. (In fact it's a bit of a cheat soup!)


Easy Beetroot Soup
Makes 1 big serving or 2 snack servings

  • 250 grams of cooked beetroot (approx. 4 beetroots)
  • 1 can of cooked brown lentils (approx. 1 1/2 cups)
  • 1 brown onion 
  • dash of oil
  • salt and pepper to taste
  • a few slices of avocado (optional)

Too simple!

  • Chop onion and gently cook in a little bit of oil for about 5 minutes until soft. 
  • Add cooked onion, cooked lentils (including liquid from can) and cooked beetroot to blender. 
  • Blend together until smooth. You might want to add a bit of water depending on how thick you would like it. 
  • Pour into a saucepan and heat on low temperature until warm. 
  • Add salt and pepper to taste and top with sliced avocado. 
  • Enjoy!
