Individual Apple and Blueberry Crumbles
Makes 4 servings
Ingredients:
- 2 granny smith apples
- a handful of blueberries
- 1 tbsp flax meal
- 1 tbsp sunflower seeds
- 1 tbsp oats (not quick oats)
- 1/2 tsp cold butter or coconut oil
- cinnamon
- (optional: greek yoghurt or vegan cream to serve)
Directions:
- Preheat oven to 180C and line a baking tray with baking paper.
- Cut the apples in half and scoop out the cores. I also found it helpful to slice a little bit off the back so they stand properly.
- Fill the centres with blueberries and place on the baking tray.
- In a food processor or small bullet blender pulse the flax meal, sunflower seeds and oats until it a crumbly mix is formed.
- Place crumble mix in a small bowl and add butter or coconut oil. Rub it in until it is combined throughout.
- Cover the tops of the apples with the crumble mix and sprinkle cinnamon over the top.
- Bake in the oven for 30 minutes.
- Serve hot with greek yoghurt or vegan cream
- Enjoy!
