I love soup! And while it's not exactly a soup time of the year, the weather has been cosier then it should. This is my easy peasy soup you can whip up in a couple of minutes. (In fact it's a bit of a cheat soup!)
Easy Beetroot Soup
Makes 1 big serving or 2 snack servings
Ingredients:
- 250 grams of cooked beetroot (approx. 4 beetroots)
- 1 can of cooked brown lentils (approx. 1 1/2 cups)
- 1 brown onion
- dash of oil
- salt and pepper to taste
- a few slices of avocado (optional)

Directions:
- Chop onion and gently cook in a little bit of oil for about 5 minutes until soft.
- Add cooked onion, cooked lentils (including liquid from can) and cooked beetroot to blender.
- Blend together until smooth. You might want to add a bit of water depending on how thick you would like it.
- Pour into a saucepan and heat on low temperature until warm.
- Add salt and pepper to taste and top with sliced avocado.
- Enjoy!
