Dairy Free Pistachio Ice Cream



It's almost the end of Summer!! Nooo! It's a good thing the weather has been so nice this week, a great way to finish off the season before heading into Autumn.

Since the weather is so beautiful I thought I would share my dairy free, sugar free pistachio ice cream. Not that it needs to be hot weather to eat ice cream, pretty sure you can eat it all year round!


Dairy Free Pistachio Ice Cream
Full of good healthy fats and very satisfying!


Ingredients:

  • 1/2 shelled pistachios
  • 1 can coconut milk
  • 1 tsp vanilla 
  • juice of 1/4 lemon
  • stevia to taste (I used about 30 drops)


Directions:

  • In a high speed blender or coffee grinder, grind the pistachios into a powder. 
  • Place pistachios, coconut milk, lemon juice, vanilla and stevia in a food processor and blend until thoroughly combined. Remember that when the ice cream freezes it will be a little less sweet then how it tastes now.
  • Pour the ice cream mixture into a container and freeze until set.
  • You may need to let the ice cream thaw a little before serving. 
  • Enjoy!
