Avocado For Dessert?

I mentioned in a recent post my current love for blending. Well this has to be my absolute favourite at the moment! Chocolatey-raspberry-moussey goodness! And what makes this delicious dessert so creamy and satisfying? Avocado!

Trust me when I say you can't taste the avocado in this recipe. You have to give this a go, it's too easy. You could eat it as a dip and dunk chopped up fruit in it, you could even use it as a frosting or just eat the whole thing as a thick pudding dessert.

Choc-Raspberry Mousse

Ingredients:
  • 1 avocado
  • 2 tbsp raw cacao or unsweetened cocoa powder
  • 1 cup frozen raspberries
  • sweetener  to taste (optional: you could use stevia, raw honey, coconut nectar even a medjool date)

Directions:
  • Blend avocado, cocoa, and raspberries using either a food processor or a stick blender. (I don't recommend using a normal blender as the mixture is too thick)
  • You can taste it at this point and add in desired amount of sweetener. I almost liked it as it was but decided to add just a pinch of stevia.

Pre-blend

Yum!

The frozen raspberries makes it instantly cool, but you could chill it in the fridge if you wanted it extra thick and cold. Try different combinations and add flavours to make it your own. You could mix in shredded coconut, fresh berries, chopped nuts - the options are endless. Let me know what you come up with!
